Broccoli & Cheese Frittata

Ingredients

8 eggs (2 per person)

Milk for whisking (milk makes the egg mixture fluffy)

Ground pepper to taste

2 broccoli crowns (microwaved until soft ) cut into bite size pieces

1 onion minced

1 cup reduced fat cheese

Crisco olive oil spray

 

Directions

Use a glass 8 x 8 glass baking dish, spray with olive oil.

Add microwaved broccoli to sprayed pan.

Whisk eggs, milk, pepper and minced onions in medium bowl.

Add cheese to whisked mixture.

Pour mixture over broccoli.

 

Bake dish in oven at 350 degrees for 30 - 35 minutes.  

Bake it until the top is browned and the frittata separates from the sides.
